Chicken Mixture
- 1 rotisserie chicken, shredded (about 1-1.5 pounds)
- 1 tablespoon olive oil
- 1 small onion, diced
- 1/2 teaspoon garlic powder
- 1/2 teaspoon sea salt

- 1 teaspoon Worcestershire sauce
Sauce
- 1/3 cup sour cream
- 1 (10 3/4 oz) can condensed Cheddar Cheese soup
- 1 (10 3/4 oz) can condensed Cream of Chicken or Cream of Mushroom soup
Vegetables and Topping
- 4-5 cups fresh broccoli florets
- 2 cups fresh green beans, cut into 1-inch pieces
- 28 ounce package of frozen tater tots*
- 1 bunch fresh parsley, chopped (optional)
- Crispy shoestring onions (optional)
Instructions
- Preheat and Prepare Dish: Preheat your oven to 350°F. Lightly spray a 10×7 inch baking dish with non-stick cooking spray and set it aside to use later.
- Sauté Onions and Season Chicken: In a large skillet over medium heat, heat the olive oil. Add diced onions and sauté until they become tender and translucent, about 3-5 minutes. Turn the heat off and add the shredded chicken along with garlic powder, sea salt, and fresh ground pepper. Stir everything to combine well.
- Mix Sauce Ingredients: In a large bowl, whisk together Worcestershire sauce, sour cream, condensed Cheddar Cheese soup, and condensed Cream of Chicken or Cream of Mushroom soup until smooth and blended.
- Combine Chicken, Veggies, and Sauce: Add the cooked chicken mixture, fresh broccoli florets, and cut green beans to the sauce. Stir thoroughly so all ingredients are evenly coated.
- Assemble Casserole: Spread the chicken and vegetable mixture evenly in the prepared baking dish. Top the mixture with a single, even layer of frozen tater tots.
- Bake: Place the casserole in the preheated oven and bake uncovered for 50 minutes, or until the tater tots are golden brown and the casserole is bubbling around the edges.
- Cool and Garnish: Allow the casserole to cool for about 10 minutes before serving. Optionally, garnish with chopped fresh parsley and crispy shoestring onions for extra flavor and crunch.
Notes
- I use Ore-Ida Extra Crispy Tater Tots for the best texture.
- To get extra crunchy tater tots, pre-bake them for about 10 minutes before placing on top of the casserole, or turn the oven to broil after baking and brown the tater tots under the broiler for 5 minutes while watching carefully to avoid burning.
- This casserole is delicious served with crispy shoestring onions sprinkled on top for added texture and flavor.
