Ingredients

Units Scale

Chicken Mixture

  • 1 rotisserie chicken, shredded (about 1-1.5 pounds)
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon fresh ground pepper
  • 1 teaspoon Worcestershire sauce

Sauce

  • 1/3 cup sour cream
  • 1 (10 3/4 oz) can condensed Cheddar Cheese soup
  • 1 (10 3/4 oz) can condensed Cream of Chicken or Cream of Mushroom soup

Vegetables and Topping

  • 4-5 cups fresh broccoli florets
  • 2 cups fresh green beans, cut into 1-inch pieces
  • 28 ounce package of frozen tater tots*
  • 1 bunch fresh parsley, chopped (optional)
  • Crispy shoestring onions (optional)

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 350°F. Lightly spray a 10×7 inch baking dish with non-stick cooking spray and set it aside to use later.
  2. Sauté Onions and Season Chicken: In a large skillet over medium heat, heat the olive oil. Add diced onions and sauté until they become tender and translucent, about 3-5 minutes. Turn the heat off and add the shredded chicken along with garlic powder, sea salt, and fresh ground pepper. Stir everything to combine well.
  3. Mix Sauce Ingredients: In a large bowl, whisk together Worcestershire sauce, sour cream, condensed Cheddar Cheese soup, and condensed Cream of Chicken or Cream of Mushroom soup until smooth and blended.
  4. Combine Chicken, Veggies, and Sauce: Add the cooked chicken mixture, fresh broccoli florets, and cut green beans to the sauce. Stir thoroughly so all ingredients are evenly coated.
  5. Assemble Casserole: Spread the chicken and vegetable mixture evenly in the prepared baking dish. Top the mixture with a single, even layer of frozen tater tots.
  6. Bake: Place the casserole in the preheated oven and bake uncovered for 50 minutes, or until the tater tots are golden brown and the casserole is bubbling around the edges.
  7. Cool and Garnish: Allow the casserole to cool for about 10 minutes before serving. Optionally, garnish with chopped fresh parsley and crispy shoestring onions for extra flavor and crunch.

Notes

  • I use Ore-Ida Extra Crispy Tater Tots for the best texture.
  • To get extra crunchy tater tots, pre-bake them for about 10 minutes before placing on top of the casserole, or turn the oven to broil after baking and brown the tater tots under the broiler for 5 minutes while watching carefully to avoid burning.
  • This casserole is delicious served with crispy shoestring onions sprinkled on top for added texture and flavor.
