  • 3 large potatoes, peeled and cubed
  • Olive oil, to coat
  • Salt, pepper, garlic powder, paprika – to taste

Ground Beef:

  • 1 lb ground beef
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp dried cilantro
  • 1 tsp paprika
  • 1 tbsp minced garlic
  • 1/2 cup water

Additional Ingredients:

  • Nacho cheese – as desired
  • 5 burrito-size flour tortillas
  • Taco sauce – to taste

Instructions

  1. Prepare Potatoes: Peel and cube potatoes. Toss with oil and seasonings.
  2. Cook Potatoes: Air fry at 400°F for 25 minutes, shaking a few times.
  3. Cook Ground Beef: Brown ground beef in a skillet, add seasonings and garlic. Pour in 1/2 cup water and simmer on low.
  4. Assemble Burritos: Warm tortillas. Add nacho cheese, beef, taco sauce, and potatoes. Roll burritos tightly.
  5. Grill Burritos: Grill in a skillet until golden on both sides. Serve warm.
