Description

Lasagna Roll Ups are a delightful twist on classic lasagna, featuring tender lasagna noodles rolled with a rich three-cheese filling and a savory meat sauce. This recipe is easier to serve and portion, making it perfect for family dinners or meal prep. Baked to perfection and topped with melted mozzarella, these roll ups offer the comforting flavors of traditional lasagna with a fun, handheld presentation.

Ingredients

Scale

Pasta

  • 12 lasagna noodles (cooked to package instructions)

Meat Sauce

  • 16 oz ground beef (85% lean)
  • 1/2 cup diced onion
  • 3 garlic cloves (minced)
  • 24 oz marinara sauce
  • 1 tsp sea salt (or to taste)
  • 1/2 tsp black pepper (or to taste)
  • 1/2 tsp dried oregano

Cheese Filling

  • 15 oz ricotta cheese
  • 1 large egg
  • 1/4 cup parmesan cheese (shredded)
  • 3 cups mozzarella cheese (shredded, divided)
  • 1/4 cup parsley (chopped, plus more to garnish)

Instructions

  1. Cook the noodles: Preheat the oven to 375˚F. Cook the lasagna noodles in a large pot of salted water according to the package instructions until al dente, taking care not to overcook. Drain the noodles and immediately fill the pot with cold water to stop the cooking process and prevent sticking.
  2. Prepare the meat sauce: In a deep pan or Dutch oven over medium-high heat, cook the ground beef until no longer pink, breaking it up with a spatula for about 2 minutes. Add the diced onion and cook until softened, approximately 3 minutes. Stir in the minced garlic, sea salt, black pepper, and dried oregano, sautéing for another minute. Pour in the marinara sauce, bring to a simmer, then remove from heat. Spread 1/2 cup of this meat sauce over the bottom of a casserole dish.
  3. Mix the cheese filling: In a large bowl, combine the ricotta cheese, egg, shredded Parmesan cheese, 1 1/2 cups of shredded mozzarella cheese, and chopped parsley. Stir until smooth and well blended.
  4. Assemble the roll ups: Lay the cooked noodles flat in a single layer on a large baking sheet to keep them from sticking. Spread about 1/4 cup (about a scant ice cream scoop) of the cheese mixture evenly over each noodle. Add a heaping tablespoon of meat sauce in a strip down the center of each noodle. Carefully roll each noodle up and place the rolls seam-side down in the prepared casserole dish.
  5. Top and bake: Spread the remaining meat sauce evenly over the tops of the roll ups. Sprinkle the remaining 1 1/2 cups of mozzarella cheese over the sauce. Cover the casserole dish with foil, ensuring the foil does not touch the cheese—if necessary, use toothpicks in the rolls to hold the foil away. Bake in the preheated oven for 40 minutes.
  6. Broil for finishing: Remove the foil and broil the lasagna roll ups for an additional 2 to 3 minutes, or until the cheese is lightly golden and bubbly. Garnish with additional chopped parsley before serving.

Notes

  • Lasagna Roll Ups offer the same delicious flavors as classic lasagna but are easier to serve and portion individually.
  • This recipe uses a rich Ragu-style meat sauce that can be made from jarred or homemade marinara sauce.
  • The three-cheese filling—ricotta, Parmesan, and mozzarella—adds a decadent, creamy texture to each roll.
  • The dish can be made ahead and keeps well, making it convenient for meal prep or sharing with friends and neighbors.
  • To prevent the foil from sticking to the cheese during baking, use toothpicks to create space if your casserole dish is shallow.
