Ground Beef Mixture:
- 1 1/2 pounds ground beef
- 1 red bell pepper, diced
- 1/2 yellow onion, diced
- 1 (1.25 oz.) packet taco seasoning
- kosher salt and freshly ground pepper, to taste
Sour Cream Mixture:
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 3/4 cups sharp cheddar cheese, shredded, divided
- 1 (4 oz.) can diced green chiles
- 1 teaspoon garlic powder
Biscuit Layer:
- 2 1/2 cups biscuit mix
- 1 cup water
Additional:
- 1 (10 oz.) can fire-roasted diced tomatoes with green chiles
Instructions
- Preheat oven and prepare pan: Preheat oven to 350ยบ F and lightly grease a 9×13-inch pan with non-stick spray.
- Cook ground beef: In a large pan or skillet over medium-high heat, cook ground beef, onion, and red bell pepper until meat is browned and vegetables are softened. Drain off grease and set aside.
- Season beef: Stir in taco seasoning packet, salt, and pepper.
- Prepare sour cream mixture: In a medium bowl, combine sour cream, mayonnaise, 1 cup cheddar cheese, green chiles, and garlic powder.
- Make biscuit dough: In a separate bowl, mix biscuit mix with water until a soft dough forms.
- Layer and bake: Press biscuit dough into the bottom of the prepared baking dish and bake until lightly golden. Layer with beef mixture, diced tomatoes, sour cream mixture, and remaining cheddar cheese.
- Bake casserole: Bake for 30 minutes or until warmed through.
- Serve: Remove from oven, serve, and enjoy!
