Description

Cattle Drive Casserole is a hearty and flavorful dish featuring layers of seasoned ground beef, biscuit dough, cheese, and a creamy sour cream mixture, all baked to perfection. This crowd-pleasing casserole is sure to become a family favorite!

Ground Beef Mixture:

  • 1 1/2 pounds ground beef
  • 1 red bell pepper, diced
  • 1/2 yellow onion, diced
  • 1 (1.25 oz.) packet taco seasoning
  • kosher salt and freshly ground pepper, to taste

Sour Cream Mixture:

  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 3/4 cups sharp cheddar cheese, shredded, divided
  • 1 (4 oz.) can diced green chiles
  • 1 teaspoon garlic powder

Biscuit Layer:

  • 2 1/2 cups biscuit mix
  • 1 cup water

Additional:

  • 1 (10 oz.) can fire-roasted diced tomatoes with green chiles

Instructions

  1. Preheat oven and prepare pan: Preheat oven to 350ยบ F and lightly grease a 9×13-inch pan with non-stick spray.
  2. Cook ground beef: In a large pan or skillet over medium-high heat, cook ground beef, onion, and red bell pepper until meat is browned and vegetables are softened. Drain off grease and set aside.
  3. Season beef: Stir in taco seasoning packet, salt, and pepper.
  4. Prepare sour cream mixture: In a medium bowl, combine sour cream, mayonnaise, 1 cup cheddar cheese, green chiles, and garlic powder.
  5. Make biscuit dough: In a separate bowl, mix biscuit mix with water until a soft dough forms.
  6. Layer and bake: Press biscuit dough into the bottom of the prepared baking dish and bake until lightly golden. Layer with beef mixture, diced tomatoes, sour cream mixture, and remaining cheddar cheese.
  7. Bake casserole: Bake for 30 minutes or until warmed through.
  8. Serve: Remove from oven, serve, and enjoy!
