For the Steak Bites

    • 1.5 lbs. top sirloin, trimmed and cubed (1-inch pieces)
    • 2 Tbsp. Cajun seasoning (2 1/2 Tbsp. for extra heat)
    • 1/2 Tbsp. butter or coconut oil

For the Homemade Cajun Seasoning (makes extra)

  • 3 Tbsp. smoked paprika
  • 1.5 Tbsp. salt
  • 2 Tbsp. garlic powder
  • 1 Tbsp. onion powder
  • 1 Tbsp. dried oregano
  • 1 Tbsp. cayenne pepper
  • 1 tsp. freshly ground black pepper

Instructions

  1. Make the Cajun Seasoning: In a small bowl or mason jar, combine the smoked paprika, salt, garlic powder, onion powder, dried oregano, cayenne pepper, and freshly ground black pepper. Stir well and set aside. You will only use 1.5–2.5 Tbsp. for this recipe; store the rest for later use.
  2. Prep the Steak: Cut the top sirloin into 1-inch cubes. Place the steak pieces into a mixing bowl and add 2 Tbsp. of the Cajun seasoning (or 2 1/2 if you prefer extra heat). Toss well to evenly coat all sides.
  3. Heat the Skillet: In a medium cast iron skillet or heavy-bottomed pan, melt the butter (or coconut oil) over medium-high heat until shimmering.
  4. Cook the Steak Bites: Add the seasoned steak cubes to the hot skillet in a single layer. Let them cook undisturbed for at least 2 minutes to develop a good sear. Stir or flip, then cook for another 2 minutes or until the steak bites are golden brown and cooked to your preferred doneness.
  5. Serve: Remove the steak bites from the skillet immediately. Serve with your favorite sides such as mashed potatoes or roasted vegetables.

Notes
