Ingredients
Scale
Chicken
- 3 large boneless skinless chicken breasts (boiled and shredded)
Dip Base
- 8 ounces cream cheese (cubed)
- 1 cup ranch dressing (homemade or store-bought)
- 1 cup hot sauce (I used Frank’s RedHot), plus more as needed
- 1 teaspoon freshly ground black pepper
- 1 teaspoon garlic powder
Add-ins
- 1/2 cup green onion (chopped)
- 1.5 cups mozzarella cheese (shredded, divided)
- 1.5 cups cheddar cheese (shredded, divided)
Instructions
- Cook the Chicken: Bring a large pot of water to a boil over high heat. Add the chicken breasts and return to a boil. Remove from heat, cover with a lid, and let the chicken poach for about 25 minutes until fully cooked. Remove the chicken and let it cool enough to handle, then shred it. (Note: chicken cooking time is not included in total cooking time.)
- Preheat and Prepare Baking Dish: Preheat your oven to 350°F (175°C). Spray a 9×9-inch baking pan or similar size with non-stick cooking spray.
- Warm the Sauce: In a medium saucepan over medium-low heat, combine cream cheese, ranch dressing, hot sauce, black pepper, and garlic powder. Whisk constantly until the cream cheese has completely melted and the mixture is smooth. Remove from heat.
- Combine Ingredients: Add the shredded chicken, chopped green onions, 1 cup of shredded mozzarella, and 1 cup of shredded cheddar cheese to the sauce. Stir thoroughly to combine. Transfer this mixture to the prepared baking pan. Sprinkle the remaining mozzarella and cheddar cheese evenly over the top.
- Bake the Dip: Bake in the preheated oven for 20-30 minutes, or until the cheese has fully melted and the sides are bubbling.
- Broil for Finish: Switch your oven to broil. Broil the dip for an additional 2-3 minutes until the top turns golden brown. Remove immediately to prevent burning.
- Serve: Serve the buffalo chicken dip warm with tortilla chips, vegetable sticks, or crackers. Leftovers can be wrapped in a tortilla with your favorite greens for a tasty snack.
