Ingredients
Scale
Chicken and Buffalo Sauce
- 2-3 chicken breasts (1.5-2 pounds)
- 1 cup buffalo sauce (we prefer Sweet Baby Ray’s)
Cheese and Slaw
- 6 slices mozzarella cheese
- 6 cups coleslaw (pre-made works great!)
- 1 recipe blue cheese dressing
Buns
- 6 potato hamburger buns
Instructions
- Prepare the chicken: Place the chicken breasts in a cooking vessel suitable for slow cooking or baking. If slow cooking, add buffalo sauce and cover. If baking, preheat the oven and coat chicken with buffalo sauce.
- Cook the chicken: Cook the chicken breasts thoroughly. If slow cooking, set on low for about 2 hours until the chicken is tender. If baking, cook at 375°F (190°C) for about 30-40 minutes until cooked through.
- Shred the chicken: Once cooked, remove chicken breasts and shred them using two forks. Mix the shredded chicken with additional buffalo sauce to keep it moist and flavorful.
- Assemble the slaw: In a bowl, toss the coleslaw with the blue cheese dressing until evenly coated to create the blue cheese slaw.
- Toast the buns: Lightly toast the potato hamburger buns to enhance texture and flavor.
- Build the burgers: Place a generous portion of shredded buffalo chicken on the bottom bun. Top with a slice of mozzarella cheese and a heap of the blue cheese slaw. Cover with the top bun.
- Serve: Serve immediately while warm and enjoy a delicious combination of spicy buffalo chicken and creamy blue cheese slaw in every bite.
