  • 1/4 cup Frank’s RedHot buffalo wing sauce
  • 2 Tbsp. mayonnaise
  • 1/4 tsp. kosher salt
  • 1 (12-oz.) can Pillsbury biscuit dough
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup crumbled blue cheese (optional)
  • 2 Tbsp. unsalted butter, melted
  • 2 tsp. ranch seasoning
  • Ranch dressing and blue cheese dressing, for serving (optional)


Instructions

  1. Preheat and Prepare Pan: Arrange a rack in the center of the oven and preheat to 350°F. Grease an 8-inch round pan with cooking spray to prevent sticking.
  2. Mix Chicken Filling: In a medium bowl, combine shredded cooked chicken, Frank’s RedHot buffalo wing sauce, mayonnaise, and kosher salt. Stir until well blended and evenly coated with the sauce.
  3. Assemble Biscuit Bombs: Flatten each biscuit round with your fingers to about 1/4 inch thickness. Spoon approximately one tablespoon of the chicken mixture onto the center of each round. Top with shredded Monterey Jack cheese and crumbled blue cheese if using. Gather the edges of the biscuit dough tightly together over the filling, pinching seams closed to form a ball. Place the balls seam-side down in the prepared pan.
  4. Prepare Butter Brush and Apply: In a small bowl, mix melted unsalted butter with ranch seasoning until combined. Brush the seasoned butter generously over the biscuit bombs.
  5. Bake Biscuit Bombs: Bake in the preheated oven for 10 to 12 minutes or until they just begin to turn golden brown. Brush the biscuit bombs again with the ranch butter and continue baking for an additional 5 minutes until fully toasted and golden brown.
  6. Serve: Remove from the oven and transfer the biscuit bombs to a serving platter. Serve warm with ranch dressing and blue cheese dressing alongside if desired.

  • For a spicier kick, add extra buffalo wing sauce to the chicken mixture.
