- 1/4 tsp black pepper

Instructions
- Preheat Oven: Preheat your oven to 220C/425F (standard) or 200C/400F (fan) to ensure it’s hot enough to caramelize the carrots nicely.
- Prepare Carrots: Slice the carrots diagonally into 4cm / 1.75” lengths. Halve the thicker ends so all pieces have a consistent width for even cooking.
- Toss with Glaze Ingredients: In a large bowl, combine the sliced carrots with brown sugar, melted butter, minced garlic, olive oil, salt, and black pepper. Mix well to evenly coat all the carrot pieces.

- Roast Carrots: Roast the carrots in the preheated oven for 15 minutes. Then toss them gently to turn and roast for an additional 10 minutes. The carrots should become soft with caramelized edges and a sticky glaze left on the tray.
