Description

Sweet Potatoes

  • 3 pounds sweet potatoes

Instructions

  1. Preheat and Bake Sweet Potatoes: Preheat your oven to 400 degrees Fahrenheit. Prick the sweet potatoes all over with a fork and place them on a sheet pan lined with foil or parchment paper. Bake for about 1 hour, or until the sweet potatoes are fork tender. Once done, remove from the oven and let cool slightly.
  2. Make Brown Butter: While the potatoes are roasting, dice the butter and add it to a small skillet or pot. Heat over medium heat until the butter melts and begins to bubble. Continue cooking, stirring occasionally, until the butter turns a golden brown with brown bits forming at the bottom.   3. Prepare Mashed Sweet Potatoes: Peel the slightly cooled sweet potatoes and transfer them to a large mixing bowl. Add the coconut milk, maple syrup, vanilla extract, cinnamon, ground ginger, allspice, salt, and most of the brown butter to the bowl.
  4. Mash and Mix: Using a hand mixer or potato masher, mash the mixture until it reaches your desired consistency. Taste and add more coconut milk if needed for creaminess.
  5. Serve: Transfer the mashed sweet potatoes to a serving dish. Sprinkle with a bit more cinnamon and drizzle the reserved tablespoon of brown butter on top for a rich, glossy finish. Serve warm and enjoy!
