An easy-to-make vegetarian snack, these Broccoli Feta Fritters are crispy on the outside, tender inside, and packed with the rich flavors of broccoli, feta, and herbs, perfect for appetizers or a quick bite.

Main Ingredients

      • 4 small crowns broccoli
      • 3 eggs, lightly beaten
      • 5 tbs all purpose flour *
      • 1/3 cup mozzarella, shredded
      • 3 oz feta cheese, crumbled
      • 2 cloves garlic, minced
      • 3 tbs dill, chopped
      • 1 tsp onion powder
      • 1/2 tsp chili pepper flakes
      • Salt and pepper to taste

Instructions

  1. Steam the Broccoli: Steam your broccoli crowns in about 1 inch of water for 7 minutes or until fork-tender. Remove them to a paper towel and allow them to cool slightly. Pat them dry to remove excess moisture and chop them into tiny pieces.
  2. Prepare the Mixture: In a large bowl, combine the chopped broccoli, eggs, flour, mozzarella, feta cheese, garlic, dill, onion powder, chili pepper flakes, salt, and pepper. Mix everything until well incorporated.
  3. Form the Fritters: Shape the mixture into large balls using your hands. These will form the base for your fritters.
  4. Cook the Fritters: Heat 2-3 tablespoons of olive oil in a large skillet over medium heat. Add the broccoli balls to the skillet and flatten them slightly with the back of a spatula. Cook them on one side for about 6 minutes. Flip them over, flatten them again with the spatula, and cook for an additional 6 minutes. Adjust the heat if they start turning too dark brown; the goal is to achieve a golden brown exterior.

  • Serve with Tsatziki Sauce for a flavorful dip!
  • You can substitute all-purpose flour with oat flour, almond flour, or gluten-free flour for dietary adjustments.
  • If you prefer, you can replace feta cheese with shredded parmesan cheese for a different flavor.
