- 1/2 to 1 jalapeño pepper, thinly sliced

Instructions
- Prepare the Egg Mixture: In a medium bowl, beat the eggs with salt and pepper.
- Cook Vegetables and Eggs: Sauté scallions and spinach in olive oil until wilted. Add eggs and scramble until set. Set aside.
