Hand Pies

    • 1 tablespoon vegetable oil
    • 1 small onion, diced (approximately 1 cup)
    • 6 large eggs, beaten
    • 1 teaspoon salt
    • 1 teaspoon pepper
    • 1 can (8 count) Pillsbury Grand biscuits
    • 2 cups sharp cheddar cheese, shredded and divided
    • 6 slices bacon, cooked and crumbled

Seasoned Butter

  • 1/4 cup (1/2 stick or 57g) butter, melted
  • 1/2 teaspoon onion powder
  • 1 teaspoon parsley

Instructions

  1. Sauté the onions: In a medium skillet, heat oil over medium heat. Add diced onions and cook until translucent, approximately 5 minutes.
  2. Cook the eggs: Add lightly beaten eggs to the skillet. As the eggs begin to set, gently pull them across the pan with a spatula. Repeat this process occasionally until no visible liquid egg remains. Remove from heat, season with salt and pepper, and set aside.
  3. Prepare the biscuits: Remove the biscuits from the can and place them on a clean work surface. Using a rolling pin, flatten each biscuit to about 1/8-inch thickness.
  4. Assemble the hand pies: Evenly distribute the cooked eggs on top of the flattened biscuits, leaving room around the rim of each circle. Top each with 1/4 cup of shredded cheese and the crumbled bacon.
  5. Seal the hand pies: Wet your finger with water and rub it around the rim of each biscuit. Fold each biscuit into a half-moon shape. Using a fork, press along the edges to seal tightly.
  6. Prepare for air frying: Spray the basket of your air fryer with nonstick cooking spray. Working in batches, place the hand pies inside the basket. Spray the tops of the pies with cooking spray.
  7. Cook the hand pies: Air fry at 360°F for 5 minutes. Carefully turn over the hand pies and air fry for another 4 minutes.
  8. Make the seasoned butter: As the hand pies cook, combine the melted butter, onion powder, and parsley in a small bowl.
  9. Brush and finish cooking: When the hand pies are done, use tongs to remove them from the air fryer and brush the seasoned butter on top. Place them back in the air fryer to cook an additional minute.
  10. Serve: Remove the finished hand pies from the air fryer and serve warm with ketchup or salsa.
