Blueberry Sauce
- 1/2 cup fresh blueberries
- 2 tablespoons honey (or sugar or pure maple syrup)
- 1 teaspoon freshly squeezed lemon juice
- 1/2 teaspoon vanilla extract
- Pinch of salt
Goat Cheese
- 8 ounces goat cheese log (cut into 6 pieces)
Instructions
- Make Blueberry Sauce: In a medium-sized bowl, add the fresh blueberries and honey (or your preferred sweetener). Microwave the mixture for 30–60 seconds, until the blueberries begin to expand and a few have burst. Mash the berries using a slotted spoon or potato masher until a thick sauce forms. Stir in the lemon juice, vanilla extract, and a pinch of salt. Place the berry sauce in the freezer for 15–20 minutes until it has cooled completely.
- Mix Goat Cheese: While the sauce is cooling, cut the goat cheese into 6 pieces. Stir these pieces into the cooled blueberry sauce, gently folding to combine. Do not overmix—you want to keep some large chunks of goat cheese for texture. If the mixture is too soft, return it to the freezer for an additional 15 minutes to firm up.
- Form into Log: Lay out 2 pieces of 15-inch plastic wrap on a flat surface in a plus sign. Place the blueberry goat cheese mixture in the center of the horizontal piece. Use the plastic wrap to shape the mixture into a log, wrapping first horizontally and then with the vertical piece, twisting both ends to seal tightly.
- Chill and Serve: Refrigerate the log for 2–4 hours or freeze for 30–45 minutes until firm. Before serving, allow it to come to room temperature for easy slicing. Serve with crackers and enjoy!
