Ingredients for BLT Chicken Salad:
- 2 boneless skinless chicken breasts
- 5 strips of bacon
- 1/4 cup chopped green onion
- 1/2 cup quartered cherry tomatoes
- 1/2 cup mayonnaise
- 1/2 tsp black pepper
Instructions
- Cook the Chicken: Place chicken breasts in a medium saucepan, cover with cold water, bring to a boil, then simmer for 14 minutes. Shred the chicken.
- Prepare Bacon: Fry bacon until crispy, then chop into pieces.
- Mix Ingredients: Combine mayo, green onion, and black pepper in a bowl. In a larger bowl, mix shredded chicken, mayo mixture, tomatoes, and bacon.
