Instructions

  1. Cook Sweet Potatoes: In a large skillet, heat olive oil over medium heat. Add the sweet potato cubes, cover the skillet, and cook for 5-7 minutes, stirring occasionally to prevent sticking.
  2. Add Aromatics and Seasoning: Stir in the finely diced onion, crushed garlic, salt, and pepper. Continue cooking uncovered over medium heat for 12-15 minutes, stirring occasionally, until the sweet potatoes are tender and cooked through.
  3. Warm Tortillas (Optional): In a separate skillet over medium heat, melt 1 tablespoon of coconut oil. Add 2-3 corn tortillas and heat for 1-2 minutes on each side until warm and slightly toasted. Remove and place on a paper towel to absorb any excess oil. Repeat with remaining tortillas.
