Big Mac Sloppy Joes

  • 1/2 yellow onion, chopped
  • 1 lb. lean ground beef (96/4)
  • 1 tsp. yellow mustard
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1/2 tsp. salt
  • Fresh cracked black pepper, to taste
  • 1/2 cup beef broth, divided
  • 1 tsp. corn starch mixed with 1/4 cup broth
  • 1 tsp. Worcestershire sauce
  • 5 slices American cheese
  • 5 Brioche hamburger buns

Big Mac Sauce

  • 1/4 cup mayonnaise (60g)
  • 1/4 cup ketchup (60g)
  • 1/4 cup dill pickles, finely chopped
  • 1 Tbsp. dill pickle juice

Instructions

  1. Cook the Beef and Onions: Spray a large skillet over medium heat with nonstick spray. Add the chopped onions and ground beef. Cook, breaking up the meat into small pieces, until the beef is cooked through and the onions are softened, about 5 minutes.
  2. Season the Meat: Add garlic powder, onion powder, salt, and fresh cracked black pepper. Stir well to evenly coat the meat. Add the yellow mustard and Worcestershire sauce, and stir until everything is combined.
  3. Simmer with Broth: Pour in 1/4 cup of the beef broth. Stir and simmer the mixture for 2-3 minutes to help combine flavors and keep the meat moist.
  4. Thicken the Mixture: Mix the cornstarch with remaining 1/4 cup beef broth until dissolved, then add to the meat mixture. Stir and let simmer for 5 minutes, until the mixture is thickened and saucy.
  5. Prepare Big Mac Sauce: While the beef mixture is simmering and thickening, combine the mayonnaise, ketchup, chopped pickles, and pickle juice in a small bowl. Stir well until smooth and set aside.
  6. Assemble the Sloppy Joes: Preheat your oven broiler. Place the bottom halves of the brioche buns on a baking sheet. Top each with about 1 tablespoon of Big Mac sauce, some shredded iceberg lettuce (optional), about 1/2 cup (103g) of the meat mixture, and a slice of American cheese. Place the baking sheet under the broiler and broil just until the cheese melts.
  7. Finish and Serve: Spread an additional 1 tablespoon of Big Mac sauce on each top bun and add extra pickles, if desired. Place the top buns on the assembled Sloppy Joes and serve hot. For a crispier texture, broil the buns briefly before assembling.
