Ingredients

Units Scale

Beef Mixture

  • 1/2 pound lean ground beef (preferably ground sirloin)
  • 1/2 cup salsa
  • Salt, to taste
  • Pepper, to taste

Roll-Ups

  • 1 (12-ounce) can refrigerated Pillsbury Grands! crescent rolls (8 count)
  • 1 (8-ounce) package Mexican blend shredded cheese (2 cups)
  • 1 (15-ounce) can red enchilada sauce (e.g., Hatch)

Optional Toppings

  • Sour cream
  • Diced tomato
  • Diced avocado
  • Extra salsa

Instructions

  1. Prepare the Oven:
Preheat your oven to 350°F (175°C), and lightly spray a 9×13-inch baking dish with nonstick cooking spray to prevent sticking.
  2. Cook the Beef Mixture:
In a large skillet, cook the ground beef over medium heat until it’s completely browned and cooked through. Drain off any excess grease. Mix in the salsa and cook on low for about 5 minutes until heated through. Season with salt and pepper to taste, and let it cool slightly before assembling.
  3. Assemble the Crescent Roll-Ups:
Unroll the crescent rolls onto a flat surface. Place about 2 tablespoons of the prepared meat mixture onto the wider end of each roll. Add a generous pinch of shredded cheese on top of the meat. Roll up each crescent carefully, enclosing the filling as best as you can. It’s okay if some filling spills out during the process.
  4. Arrange and Add Toppings:
Place the rolled-up crescents into the prepared baking dish. Pour the enchilada sauce evenly over the rolls, ensuring they’re well-coated. Sprinkle the remaining shredded cheese on top of the sauce. Any leftover meat mixture or stray fillings can also be added on top.
  5. Bake:
Bake the roll-ups in the preheated oven for 25 to 30 minutes or until the crescent rolls are golden brown and the cheese is melted and bubbly.
  6. Serve and Enjoy:
Allow the roll-ups to cool slightly before serving. Top with your favorite garnishes such as sour cream, diced tomato, avocado, or salsa, and enjoy!

Notes

  • Make Ahead: You can prepare the filling and assemble the rolls a few hours in advance. Cover and refrigerate until you’re ready to bake.
  • Spice Level: For a spicier option, use hot salsa and a dash of chili flakes in the beef mixture.
  • Cheese Variations: Try replacing the Mexican blend with cheddar, Monterey Jack, or pepper jack for different flavors.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F for about 10-15 minutes for best results.
