Bang Bang Sauce

  • 2 tablespoons mayo
  • 4 tablespoons Greek yogurt (may substitute with sour cream)
  • 1 teaspoon Dijon mustard
  • 1/3 cup sweet red chili sauce
  • 1/2 teaspoon sriracha
  • 1 teaspoon honey

Instructions

  1. Prepare Skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning during grilling.
  2. Marinate Chicken: Place chicken pieces and half of the Bang Bang sauce into a zip-top bag. Seal and toss to coat evenly. Chill in the refrigerator for 15 minutes.
  3. Preheat Grill: Heat your grill to medium-high heat and brush the grates with oil to prevent sticking.
  4. Assemble Kabobs: Thread the marinated chicken pieces onto skewers. Do the same with the chopped peppers and onions, preferably on separate skewers from the chicken, as vegetables tend to cook faster.
  5. Grill: Place skewers on the preheated grill. Cook chicken and vegetables for about 4-5 minutes per side, turning occasionally, until the chicken is cooked through and has a slight char.
  6. Finish and Serve: Remove skewers from the grill, discard any used marinade, and brush the chicken with the remaining Bang Bang sauce. Serve warm as a flavorful entrée.
