Chicken and Vegetables
- 3-4 boneless skinless chicken breasts, cut into bite-sized pieces
- 1 red bell pepper, chopped into 1-inch pieces
- 1 green bell pepper, chopped into 1-inch pieces
- 1 cup chopped onion (a mix of white and red onions)
Bang Bang Sauce
- 2 tablespoons mayo
- 4 tablespoons Greek yogurt (may substitute with sour cream)
- 1 teaspoon Dijon mustard
- 1/3 cup sweet red chili sauce
- 1/2 teaspoon sriracha
- 1 teaspoon honey
Instructions
- Prepare Skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning during grilling.
- Marinate Chicken: Place chicken pieces and half of the Bang Bang sauce into a zip-top bag. Seal and toss to coat evenly. Chill in the refrigerator for 15 minutes.
- Preheat Grill: Heat your grill to medium-high heat and brush the grates with oil to prevent sticking.
- Assemble Kabobs: Thread the marinated chicken pieces onto skewers. Do the same with the chopped peppers and onions, preferably on separate skewers from the chicken, as vegetables tend to cook faster.
- Grill: Place skewers on the preheated grill. Cook chicken and vegetables for about 4-5 minutes per side, turning occasionally, until the chicken is cooked through and has a slight char.
- Finish and Serve: Remove skewers from the grill, discard any used marinade, and brush the chicken with the remaining Bang Bang sauce. Serve warm as a flavorful entrée.
