These Balsamic Chicken Lettuce Wraps are a delightful mix of flavors and textures, featuring juicy grilled chicken marinated in a tangy balsamic mixture, fresh strawberries, crunchy pecans, and creamy Feta cheese, all wrapped in crisp lettuce leaves.


Ingredients

Grilled Balsamic Chicken

  • 2 pounds boneless, skinless chicken breasts
  • 1/2 cup balsamic vinegar
  • 1/2 cup orange juice
  • 1/2 cup olive oil
  • 4 tablespoons honey
  • 1 tablespoon dried basil
  • Salt and pepper to taste

Balsamic Glaze

  • 1/2 cup balsamic vinegar

Lettuce Wrap

  • 812 Whole Lettuce Leaves (Butter, Iceberg or Romaine)
  • 1 pint strawberries, sliced
  • 1/2 cup pecans
  • 1/2 cup Feta Cheese

Instructions

  1. Mix marinade ingredients: Combine all marinade ingredients except chicken in a medium bowl.
  2. Rinse and dry chicken. Pound chicken to even thickness and season. Place in a ziplock bag, pour marinade over chicken, remove air, seal, and refrigerate for at least 30 minutes.

  3. Cook the chicken: Grill chicken over medium heat until cooked through, about 3-4 minutes per side. Rest chicken covered with foil.
  4. Prepare balsamic glaze: Reduce balsamic vinegar in a saucepan until thickened; set aside.
  5. Assemble wraps: Peel lettuce leaves, chop chicken, and layer in lettuce with strawberries, pecans, and Feta cheese. Drizzle with balsamic glaze.
  6. Serve immediately.

Notes

  • When storing lettuce, remove any wires or strings and wrap the head in a paper towel inside a plastic bag for freshness.
