Grilled Balsamic Chicken
- 2 pounds boneless, skinless chicken breasts
- 1/2 cup balsamic vinegar
- 1/2 cup orange juice
- 1/2 cup olive oil
- 4 tablespoons honey
- 1 tablespoon dried basil
- Salt and pepper to taste
Balsamic Glaze
- 1/2 cup balsamic vinegar
Lettuce Wrap
- 8–12 Whole Lettuce Leaves (Butter, Iceberg or Romaine)
- 1 pint strawberries, sliced
- 1/2 cup pecans
- 1/2 cup Feta Cheese
Instructions
- Mix marinade ingredients: Combine all marinade ingredients except chicken in a medium bowl.
- Cook the chicken: Grill chicken over medium heat until cooked through, about 3-4 minutes per side. Rest chicken covered with foil.
- Prepare balsamic glaze: Reduce balsamic vinegar in a saucepan until thickened; set aside.
- Assemble wraps: Peel lettuce leaves, chop chicken, and layer in lettuce with strawberries, pecans, and Feta cheese. Drizzle with balsamic glaze.
- Serve immediately.
Rinse and dry chicken. Pound chicken to even thickness and season. Place in a ziplock bag, pour marinade over chicken, remove air, seal, and refrigerate for at least 30 minutes.
Notes
- When storing lettuce, remove any wires or strings and wrap the head in a paper towel inside a plastic bag for freshness.
