Ingredients
Scale
Cheese
- 2 blocks of quality feta (3 ounces each)
Phyllo Wrap
- 2 sheets of phyllo dough (thawed)
- Extra virgin olive oil for brushing
Toppings
- ¼ cup honey
- 2 tbsp toasted sesame seeds (more to your liking)
- 1 tbsp fresh thyme leaves (for garnish)
Instructions
- Preheat the oven: Heat the oven to 350 degrees F and position a rack in the center to ensure even baking.
- Prepare the phyllo dough: Lay each sheet of phyllo dough flat on a clean surface or cutting board. Brush the surface facing you generously with extra virgin olive oil to help the layers crisp and brown beautifully.
- Wrap the feta: Place one block of feta cheese near the bottom edge of the phyllo sheet closest to you. Fold the sides of the phyllo over the cheese to cover most of it, brushing the folded areas with olive oil as needed. Continue wrapping the cheese by rolling the phyllo away from you, creating a neat package. Repeat the process with the second block of feta and remaining phyllo sheet. Brush the outermost layer with olive oil to enhance browning.
- Arrange and bake: Place the phyllo-wrapped feta packages seam side down on a small sheet pan. Bake in the preheated oven for 20 minutes until the phyllo turns golden and crispy. If the bottom is golden while the top is not after 20 minutes, carefully flip the packages and bake for an additional 5 minutes.
- Serve: Remove from the oven and transfer carefully to a serving plate using a spatula. Drizzle immediately with raw honey, sprinkle with toasted sesame seeds, and garnish with fresh thyme leaves. Serve warm for the best flavor and texture.
