Baked Brie is a simple and elegant appetizer featuring melted brie cheese baked until soft and gooey, then drizzled with honey and topped with fresh thyme. Served with crostini and grapes, this warm, rich dish is perfect for entertaining or a cozy night in.

- 250 – 500g / 8 – 16 oz round brie or camembert (good value is fine)
- 2 tbsp honey or maple syrup (optional)
- 1 thyme sprig (optional)

- 1 bunch purple grapes (or green, optional)
Instructions
- Preheat Oven: Preheat your oven to 180°C / 350°F (suitable for all oven types).
- Prepare Brie: Unwrap the brie and place it into a small, shallow ovenproof dish slightly larger than the cheese or onto a piece of crumbled baking or parchment paper to make transferring easier.
- Bake the Brie: Place the brie in the oven and bake for 15 to 20 minutes for 250g/8oz or until it feels very soft and almost about to collapse under gentle pressure. For a larger 500g/1lb brie, bake for 25 minutes. Alternatively, you can microwave for 2 minutes on high in 30-second increments.
- Transfer Carefully: Once baked, carefully transfer the brie to a serving plate or board if you baked it on paper. The cheese will be very delicate and wobbly.
- Add Toppings: Drizzle the warm brie with honey or maple syrup and top with the sprig of thyme if using.
- Serve: Serve immediately with crostini or sturdy crackers on the side. Provide knives to cut through the rind and scoop the cheese onto the crackers for your guests to enjoy.
Notes
- Use a budget-friendly brie for baking; expensive brie is better served as is without baking.
- Using a shallow ovenproof dish helps prevent cheese from oozing out during baking and makes serving easier.
- If you don’t have an ovenproof dish, crumbled parchment paper allows easy transfer to a serving plate.
- Check doneness by gently pressing the center or inserting a skewer to see if melted cheese clings to it.
- A 250g brie comfortably serves 6 to 10 people as an appetizer.
- Honey and maple syrup are interchangeable based on availability and preference.
- The baked brie remains gooey for about 10–15 minutes when baked in a ceramic dish.
- Leftover baked brie tastes delicious reheated briefly in the microwave and can be spread on toast.
