Description

A delicious and hearty Bacon Cheeseburger Melt that combines all your favorite burger flavors into a grilled sandwich. This indulgent recipe features caramelized onions, crispy bacon, melted cheddar cheese, a flavorful aioli spread, and perfectly cooked ground beef patties between slices of golden-brown Texas toast.

CHEESEBURGER MELT

  • 3 tablespoons butter
  • 3 yellow onions, sliced thin
  • 1 pound ground beef
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 8 slices cheddar cheese
  • 8 slices Texas toast
  • 12 slices hamburger pickles
  • 1 large tomato, cut into slices
  • 12 pieces bacon, cooked
  • 8 teaspoons mayonnaise

AIOLI SPREAD

  • 1/3 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon pepper
  • 1 tablespoon (about 3 cloves) garlic, minced
  • 1 teaspoon fresh parsley
  • 1 tablespoon ketchup

Instructions

  1. Caramelize onions: In a medium skillet, melt butter over medium-low heat. Add onions and cook until caramelized (about 15-20 minutes), stirring often. Add water as needed to prevent burning. Remove from skillet and tent to keep warm.
  2. Prepare beef patties: In a large bowl, mix together ground beef, Worcestershire sauce, garlic powder, salt, and pepper. Shape the mixture into 4 square patties (a little larger than the bread), each about ¼ inch thick.
  3. Cook beef patties: Wipe out the skillet and set the heat to medium-high. Add the hamburger patties in batches (two at a time) and cook for 1-2 minutes per side. Remove patties from the skillet and set aside.
  4. Make aioli spread: In a small bowl, combine mayonnaise, lemon juice, pepper, garlic, parsley, and ketchup. Stir well to create the aioli spread.
  5. Assemble the sandwich: Top 4 slices of bread with cheese, a hamburger patty, onions, pickles, tomato slices, another slice of cheese, bacon, aioli spread, and another piece of bread.
  6. Prepare for grilling: Spread 1 teaspoon of mayonnaise on the top slice of bread of each sandwich.
  7. Grill the sandwiches: Wipe out the skillet and set heat to medium. Add sandwiches to the pan, mayo side down, in batches (two at a time). Place a weighted pan on top to firmly press the sandwich into the pan. Cook until golden brown on the underside (about 3 minutes). Remove the weighted pan, spread 1 teaspoon of mayo on the top slice of bread, and flip the sandwich. Cook for an additional 3 minutes or until golden brown. Serve warm.

Notes

  • You can substitute ground beef with ground turkey or plant-based meat for dietary preferences.
  • For more spice, add sliced jalapeños or a pinch of crushed red pepper to the aioli spread.
  • Make sure not to overcrowd the pan when grilling the sandwiches to achieve an even golden-brown crust.
  • Leftover aioli can be stored in the fridge for up to 1 week and used as a dip or spread for other dishes.
