For the Marinade:
- 3 Tbsp unsalted butter
- 2 Tbsp soy sauce
- 2 tsp fresh-squeezed lime juice
- 1 tsp grated ginger
- 2 cloves garlic, minced
- 1 1/2 Tbsp sugar
- 2 thinly sliced scallions
For the Shrimp:
- 1 lb large shrimp, shelled and deveined

- Prepare the marinade:
In a small saucepan, combine the butter, soy sauce, lime juice, ginger, garlic, and sugar. Whisk the ingredients together and bring them to a simmer over medium-low heat. Stir occasionally until everything is well combined. Once simmered, remove the saucepan from the heat and fold in the sliced scallions. Allow the marinade to cool to room temperature. - Marinate the shrimp:
Place the shrimp in a resealable bag or a bowl covered with plastic wrap. Pour the marinade over the shrimp, ensuring they’re evenly coated. Marinate in the refrigerator for at least 1 hour, but ideally, between 3 to 5 hours. Avoid marinating for longer than 5 hours to prevent the shrimp from becoming mushy. - Prepare the skewers:
Remove the shrimp from the marinade and place them onto skewers. If using wooden skewers, soak them in water for about 30 minutes beforehand to avoid burning during grilling. - Simmer the marinade:
Pour the leftover marinade back into the saucepan and bring it to a simmer for 1 minute. This will ensure it’s safe for basting or dipping. - Grill the shrimp:
