Description

These Apple Samoas are a delightful and healthy treat that will satisfy your sweet cravings. Crisp apple slices topped with a coconut almond butter mixture and drizzled with chocolate, these are perfect for a quick snack or dessert.

Ingredients

Scale

For the Apple Samoas:

  • 1 apple (Honeycrisp or Pink Lady)
  • 1/3 cup unsweetened shredded coconut
  • 3 Tablespoons almond butter, cashew butter, or seed butter
  • 1/2 Tablespoon maple syrup
  • 2 Tablespoons chocolate chips
  • 1/2 teaspoon coconut oil

Instructions

  1. Cut the apples: Slice the apple into ¼-inch thick slices and remove the core.
  2. Prepare the coconut mixture: Combine shredded coconut, almond butter, and maple syrup until well mixed.
  3. Assemble the Apple Samoas: Spread the coconut mixture on each apple slice and place them on parchment paper.
  4. Make the chocolate drizzle: Melt chocolate chips with coconut oil and drizzle over the apple slices.
  5. Chill and enjoy: Place the apple samoas in the freezer for 5-10 minutes until firm. Enjoy!

Notes

  • Storage: Store leftovers in an airtight container in the fridge for 2-3 days. Apples may soften slightly but will still taste great!
  • Freezing: Freeze the assembled apple slices on a baking sheet, then transfer to a freezer-safe bag for up to 1 month. Thaw briefly before eating.
