Stuffed Peppers:
- 2 tablespoons olive oil
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 6 bell peppers (any color)
- 1 lb ground beef
- 2 1/2 teaspoons Italian seasoning
- 1 teaspoon salt
- 1 (15 ounce) can diced tomatoes (not drained)
- 1 tablespoon coconut aminos or Worcestershire sauce
- 1 cup uncooked white or brown rice
- 1 cup water
- 1 cup shredded cheddar cheese or vegan cheese (optional)
Instructions
- Preheat the air fryer: Preheat the air fryer to 400°F for 3-5 minutes.
- Prepare the peppers: Cut the tops off the peppers, remove seeds, and dice the tops. Cook the peppers in the air fryer for 6 minutes.
- Make the filling: Sauté onion, garlic, and diced peppers. Add ground beef, seasonings, tomatoes, rice, and water. Simmer for 15 minutes.
- Fill the peppers: Stuff each pepper with the beef and rice mixture. Air fry for 4 minutes, then top with cheese and air fry for another 4 minutes.
