Stuffed Peppers:

  • 2 tablespoons olive oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 6 bell peppers (any color)
  • 1 lb ground beef
  • 2 1/2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1 (15 ounce) can diced tomatoes (not drained)
  • 1 tablespoon coconut aminos or Worcestershire sauce
  • 1 cup uncooked white or brown rice
  • 1 cup water
  • 1 cup shredded cheddar cheese or vegan cheese (optional)

Instructions

  1. Preheat the air fryer: Preheat the air fryer to 400°F for 3-5 minutes.
  2. Prepare the peppers: Cut the tops off the peppers, remove seeds, and dice the tops. Cook the peppers in the air fryer for 6 minutes.
  3. Make the filling: Sauté onion, garlic, and diced peppers. Add ground beef, seasonings, tomatoes, rice, and water. Simmer for 15 minutes.
  4. Fill the peppers: Stuff each pepper with the beef and rice mixture. Air fry for 4 minutes, then top with cheese and air fry for another 4 minutes.
