Scale
Chicken Marinade
- 1 pound chicken breast, cut into 1-inch cubes
- 2 tablespoons olive oil
- 2 tablespoons mayonnaise
- 1 tablespoon chili paste
- ½ tablespoon smoked paprika
- 1 teaspoon garlic granules
- 1 teaspoon onion granules
- 1 teaspoon dried parsley
- Salt and pepper, to taste
- ¼ cup parmesan cheese, grated (divided into 2 parts)
Garlic Parmesan Butter
- 4 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon dried parsley
- Remaining parmesan cheese (about 2 tablespoons)
Other
- Wooden or metal skewers (for threading chicken)
- Cooking oil spray (for air fryer basket)
Instructions
- Prepare the Chicken: Cut the chicken breast into bite-sized 1-inch cubes and transfer them to a large bowl to prepare for marinating.
- Marinate the Chicken: Add olive oil, mayonnaise, chili paste, smoked paprika, garlic granules, onion granules, dried parsley, half of the parmesan cheese, salt, and pepper to the chicken. Mix thoroughly to ensure each piece is well-coated with the flavorful marinade.
- Skewer the Chicken: Thread the marinated chicken cubes onto skewers, placing 4 to 6 pieces on each skewer evenly for consistent cooking.
- Preheat Air Fryer: Preheat your air fryer to 400°F (200°C). Lightly spray the air fryer basket with cooking oil to prevent sticking.
- Air Fry the Skewers: Arrange the chicken skewers in a single layer inside the air fryer basket. Cook for 8 to 10 minutes, flipping halfway through, until the chicken is fully cooked, nicely charred, and no longer pink inside. Ensure the internal temperature reaches 165°F (74°C).
- Prepare Garlic Parmesan Butter: Melt the unsalted butter in the microwave for about 10 seconds until mostly melted. Add minced garlic, fresh parsley, dried parsley, and the remaining parmesan cheese to the butter. Whisk together to combine the flavors.
- Brush Skewers with Butter: Once the chicken skewers are done cooking, generously brush the garlic parmesan butter all over the skewers on all sides for enhanced flavor and richness.
- Serve and Enjoy: Serve the garlic parmesan chicken skewers immediately. They pair wonderfully with wraps, rice, or creamy mashed potatoes for a satisfying meal.
Notes
- These skewers cook quickly in the air fryer, making them ideal for busy weeknights.
- You can adjust the chili paste amount to control the level of spiciness.
- Make sure chicken pieces are evenly sized for uniform cooking.
- If using wooden skewers, soak them in water for 30 minutes before use to prevent burning.
- Leftover skewers can be refrigerated up to 2 days and reheated in the air fryer.
